Savoury French Toast with Cheese & Tomato: Fancy Toastie Vibes for One

Today’s little solo hero? Savoury French Toast with Cheese & Tomato. 🧀🍅 It’s crispy on the outside, soft and gooey in the middle, and somehow makes you feel like you’re eating something vaguely European… even though it’s made from old bread, one egg, and a couple of fridge staples.

Perfect for when you’re too tired to make a real dinner, too hungry for a salad, and not quite ready to commit to UberEats (again). Also excellent for lazy weekend brunches or late-night comfort-craving situations.

Ingredients (Serves 1 hungry human)

  • 1 egg
  • 2 slices bread (whatever you’ve got – white, wholemeal, sourdough, even the weird crusty ends)
  • 2 tbsp grated cheese (cheddar, tasty, or mozzarella all work)
  • 2 slices tomato (or a few cherry tomatoes halved)
  • Salt & pepper, to taste
  • Pinch of dried herbs (optional – oregano, basil, Italian blend)
  • Butter or olive oil, for frying

Instructions

  1. Egg wash time:
    In a shallow bowl, beat the egg with salt, pepper, and herbs (if using). Fancy seasoning? Go for it. Exhausted? Just salt and pepper will do.
  2. Dip & fry:
    Dip each slice of bread into the egg mixture, coating both sides well. Heat a little butter or oil in a pan over medium heat, then fry the bread slices until golden and lightly crisp – about 2–3 minutes each side.
  3. Cheese & tomato toastie moment:
    While the bread’s still warm, add cheese and tomato slices on top of one slice. Sandwich with the second slice, and let it sit in the pan for another minute, flipping once if you want the cheese extra melty.
  4. Serve hot and smug:
    Cut it in half (if you’re feeling civilised) and enjoy while warm and gooey.
    Optional: eat over the sink so you don’t drop tomato juice on your hoodie. Again.
