One Mug, One Minute, One Very Happy Human
Day 14! At this point in December, motivation is dropping, social events are rising, and energy levels are fluctuating somewhere between “holiday sparkle” and “accidental nap o’clock.” So today, we keep it microwave-simple.
Meet the Mini Gingerbread Mug Cake—warm, spiced, soft, and ready faster than you can say “why is gift wrapping such an extreme sport?” It’s a sweet solo treat that requires almost zero washing up and absolutely no sharing. That’s correct: this cake belongs to you and only you.
Expect cosy gingerbread flavour, a hint of molasses warmth, and the soft, fluffy crumb of a real cake—but conveniently sized for one very deserving festive adult.🎄

🔥 How to Make It
- In a microwave-safe mug, mix flour, sugar, ginger, cinnamon and salt.
- Add milk, oil, vanilla, and (if using) molasses. Stir gently.
- Microwave 40–60 seconds until risen and fluffy.
- Let it cool slightly (it’s lava at first).
- Dust with extra cinnamon or a spoon of yoghurt if you’re feeling fancy.
Scale it down: halve everything and cook 25–30 seconds.
Scale it up: double the recipe and microwave 70–90 seconds (use a larger mug!).
