Ingredients (Serves 1)
- 1 large potato
- 2–3 tbsp Greek yoghurt or sour cream
- Small handful chives or spring onion
- Optional topping: leftover ham, mushrooms, or cheese
- Olive oil, salt
How to make it
- Prick potato, rub lightly with oil and salt.
- Bake at 200°C for 45–55 minutes until soft.
- Bake until a knife slides easily into the centre with no resistance.
- Split open, fluff with a fork, add toppings.
Swaps & tips
- No oven? Microwave then crisp briefly in a pan
- If microwaving, cook until completely soft all the way through before finishing in a pan or oven.
- Vegetarian? Mushrooms + yoghurt work beautifully
- Add leftover veg if you have it — no rules
