Ingredients (Serves 1)

  • ½ cup cooked lentils (rinsed and drained if using canned)
  • 1 tsp olive oil
  • 1 garlic clove
  • 1–2 cups baby spinach
  • Lemon juice, salt, pepper

How to make it

  1. Warm olive oil in a pan. Add garlic.
  2. Add lentils and heat through. Heat lentils through until hot, not just warm.
  3. Stir in spinach until wilted.
  4. Finish with lemon, salt and pepper.

  • Add feta or a soft-boiled egg for protein
  • Keeps well for next day lunch
  • Great alongside grilled chicken or fish
