When the Pantry Is Bare but the Craving Isn’t
This recipe exists for nights when:
- You don’t want to go to the shops
- You don’t want to measure flour
- You want something warm, comforting, and filling
These peanut butter oat cookies are part snack, part treat, and entirely practical. They’re naturally flour-free, rich in protein and fibre, and perfectly suited to Single-Serve Baking.
You’ll get 3–4 cookies — hearty, satisfying, and far more filling than your average biscuit.
Ingredients (All Easy Aussie Finds)
- 3 tbsp natural peanut butter
- 1 tbsp honey or maple syrup
- 1 tbsp brown sugar
- 1 egg yolk
- ¼ cup rolled oats
- Pinch cinnamon
- Pinch salt
- Optional: 1 tbsp dark choc chips
How to Make Them
- Preheat oven to 175°C. Line tray.
- Mix peanut butter, honey, sugar and egg yolk until smooth.
- Stir in oats, cinnamon and salt.
- Fold in chocolate if using.
- Spoon into 3–4 mounds, flatten gently.
- Bake 10–11 minutes until edges are set.
- Cool completely before eating.
