Soft Lemon & White Chocolate Cookies (Single-Serve Baking with a Twist)

These soft lemon & white chocolate cookies are bright without being sharp, sweet without being heavy, and perfect for afternoon tea moments where you want something, not everything.

Ingredients (Easy Australian Staples)

  • 2 tbsp unsalted butter
  • 2 tbsp white sugar
  • Zest of ½ lemon
  • 1 egg yolk
  • ¼ tsp vanilla
  • ¼ cup plain flour
  • Pinch baking powder
  • Pinch salt
  • 2 tbsp white chocolate chips

Method

  1. Preheat oven to 180°C. Line tray.
  2. Cream butter, sugar and lemon zest.
  3. Add egg yolk and vanilla.
  4. Fold in flour, baking powder and salt.
  5. Stir through white chocolate.
  6. Spoon into 4 cookies, flatten lightly.
  7. Bake 9–11 minutes.
  8. Cool fully before eating.
