Beef & Veggie Stir-Fry with Brown Rice (Single Serve)

A reliable dinner for energy without the crash

This is one of those meals I lean on when I want something savoury, satisfying, and done in under half an hour. It’s familiar, flexible, and doesn’t ask much of you — which is exactly what dinner should be most nights.

A small serve of lean beef, plenty of vegetables, and just enough brown rice to keep things steady. No gloopy sauces, no takeaway regret. Just a solid bowl that supports energy, recovery, and feeling properly fed without feeling heavy.

It’s also one of those meals that reminds you how far a hot pan and a bit of seasoning can take you.

Why this meal works

This dinner earns its place by being balanced and dependable:

  • Lean beef provides iron and B-vitamins, which support energy and stamina
  • Plenty of vegetables add fibre, helping keep blood sugar steady
  • Brown rice offers slow-release carbs, not a mid-evening slump
  • Cooking it quickly keeps flavours bright and portions sensible

It’s especially handy if you’ve had an active day or just want something that feels grounding without being over the top.

Nutritional highlights (the no-fuss version)

  • ✔ Quality protein to support muscle maintenance
  • ✔ Iron and B-vitamins for everyday energy
  • ✔ Fibre-rich vegetables for gut and blood sugar support
  • ✔ A balanced carb portion that won’t leave you sluggish

Ingredients (single serve)

  • 120–150g lean beef (sirloin, rump, or stir-fry strips)
  • 2 cups mixed vegetables (broccoli, capsicum, snow peas, carrots, zucchini)
  • ½ cup cooked brown rice
  • 1 clove garlic, finely sliced
  • 1 teaspoon grated ginger (optional but great)
  • 1–2 teaspoons olive oil
  • Soy sauce or tamari (to taste)
  • Pepper or chilli flakes (optional)

How to make it

  1. Get everything ready
Slice the beef thinly and cut the vegetables into bite-sized pieces.
Have everything near the stove — stir-fries move quickly.
  2. Cook the beef
Heat a wok or large pan over high heat with half the olive oil.
Add the beef and cook quickly for 1–2 minutes until just browned.
Remove from the pan and set aside.
  3. Stir-fry the vegetables
Add the remaining oil to the pan.
Add garlic and ginger and cook for 20–30 seconds until fragrant.
Toss in the vegetables and stir-fry until just tender but still bright.
  4. Bring it together
Return the beef to the pan.
Add a splash of soy sauce or tamari and toss everything together for another minute.
  5. Serve
Spoon the stir-fry over the brown rice and finish with pepper or chilli if you like.

Easy swaps & variations

  • Lower-carb option:
Replace the brown rice with cauliflower rice or extra vegetables.
  • No beef tonight?
Chicken breast, turkey strips, or firm tofu all work well here.
  • Flavour boost:
Add a squeeze of lime or a drizzle of sesame oil at the end.
  • Veg swaps:
Use whatever’s in the fridge — frozen stir-fry veg work perfectly too.

Storage & reheating tips

  • Leftovers:
Store in an airtight container in the fridge for up to 2 days.
  • Reheating:
Reheat gently in the microwave or pan with a splash of water to loosen.
  • Plan4One tip:
Cook a small batch of brown rice once and use it across a few dinners to save time.

A dependable weeknight staple

This is the kind of meal that doesn’t need hype. It’s quick, flexible, and leaves you feeling steady rather than stuffed. Perfect for busy nights, late dinners, or when you just want something that works.
