Ingredients

  • 1 chicken thigh or breast fillet (about 180–220g)
  • Salt and cracked black pepper
  • 1 tsp olive oil
  • 1 clove garlic, finely chopped
  • ½ cup cherry tomatoes, halved
  • ½ cup baby spinach leaves
  • ¼ cup thickened cream (or light cream)
  • 1 tbsp grated parmesan
  • Optional: dried Italian herbs or oregano
  • Optional: chilli flakes (for a little heat)

Method

  1. Season the chicken generously with salt and pepper.
  2. Heat olive oil in a pan over medium heat. Add the chicken and cook for 4–5 minutes per side until golden and cooked through. Remove from the pan and set aside.
  3. In the same pan, add garlic and cook for 30 seconds until fragrant.
  4. Add cherry tomatoes and cook for 2–3 minutes until softened and slightly jammy.
  5. Stir in cream, parmesan, and herbs. Simmer gently for 2–3 minutes until the sauce thickens slightly.
  6. Add spinach and stir until just wilted.
  7. Return chicken to the pan, spoon sauce over the top, and warm through for 1–2 minutes.
  8. Finish with cracked pepper and optional chilli flakes.
