Ingredients

  • 100–120g pasta (rigatoni, penne, or spaghetti)
  • ½ cup ricotta cheese
  • Zest and juice of ½ lemon
  • 1 clove garlic, finely chopped
  • 1 tsp olive oil
  • 2 tbsp grated parmesan
  • Small handful fresh herbs (parsley, basil, or chives), chopped
  • Salt and cracked black pepper
  • Optional: chilli flakes
  • Optional: baby spinach or peas for extra veg

Method

  1. Cook pasta in salted boiling water according to packet instructions.
  2. While pasta cooks, gently heat olive oil in a pan over medium heat and sauté garlic for 30 seconds until fragrant.
  3. In a bowl, combine ricotta, lemon zest, lemon juice, parmesan, salt, and pepper.
  4. Reserve a splash of pasta cooking water, then drain pasta.
  5. Add pasta to the pan with garlic. Remove from heat.
  6. Stir ricotta mixture through pasta, adding a little reserved cooking water to loosen the sauce.
  7. Fold through herbs and optional greens or peas.
  8. Taste and adjust seasoning. Serve with extra parmesan and chilli flakes if desired.
