Ingredients
- 1 salmon fillet (180–220g), skin on
- Salt and cracked black pepper
- 1 tsp olive oil
- 1 tsp honey
- 1 tsp wholegrain or Dijon mustard
- 1 tsp lemon juice
- 1 cup greens (asparagus, green beans, broccolini, or spinach)
- Optional: lemon wedges to serve
- Optional: chilli flakes or fresh herbs
Method
- Pat salmon skin dry with paper towel and season both sides with salt and pepper.
- Heat olive oil in a pan over medium-high heat.
- Place salmon skin-side down and cook undisturbed for 4–5 minutes until skin is crisp.
- Flip and cook another 2–3 minutes until just cooked through. Remove from pan and set aside.
- In the same pan, quickly cook greens until just tender.
- Mix honey, mustard, and lemon juice together.
- Return salmon briefly to pan and spoon glaze over, letting it warm for 30 seconds.
- Serve salmon over greens with extra lemon if desired.
