🥘 Crispy Skin Salmon with Honey-Mustard Glaze & Greens

Serves

1 generous serve (or light dinner for two)

12–15 minutes


Ingredients

  • 1 salmon fillet (180–220g), skin on
  • Salt and cracked black pepper
  • 1 tsp olive oil
  • 1 tsp honey
  • 1 tsp wholegrain or Dijon mustard
  • 1 tsp lemon juice
  • 1 cup greens (asparagus, green beans, broccolini, or spinach)
  • Optional: lemon wedges to serve
  • Optional: chilli flakes or fresh herbs

Method

  1. Pat salmon skin dry with paper towel and season both sides with salt and pepper.
  2. Heat olive oil in a pan over medium-high heat.
  3. Place salmon skin-side down and cook undisturbed for 4–5 minutes until skin is crisp.
  4. Flip and cook another 2–3 minutes until just cooked through. Remove from pan and set aside.
  5. In the same pan, quickly cook greens until just tender.
  6. Mix honey, mustard, and lemon juice together.
  7. Return salmon briefly to pan and spoon glaze over, letting it warm for 30 seconds.
  8. Serve salmon over greens with extra lemon if desired.
