Ingredients

  • ½ cup arborio rice
  • 1 tsp olive oil
  • 1 tbsp butter
  • 1 clove garlic, finely chopped
  • ½ small onion, finely diced
  • 1 cup mushrooms, sliced
  • 2–2½ cups warm chicken or vegetable stock
  • 2 tbsp grated parmesan
  • Salt and cracked black pepper
  • Optional: splash of white wine
  • Optional: fresh parsley to serve

Method

  1. Heat olive oil and half the butter in a pan over medium heat.
  2. Add onion and cook until softened, about 3 minutes.
  3. Add garlic and mushrooms, cooking until mushrooms soften and brown slightly.
  4. Stir in arborio rice and cook for 1 minute until lightly coated in oil.
  5. Add a splash of wine if using and let it absorb.
  6. Add warm stock one ladle at a time, stirring gently and allowing liquid to absorb before adding more.
  7. Continue adding stock and stirring for 18–20 minutes until rice is creamy and tender.
  8. Stir in remaining butter and parmesan. Season to taste.
  9. Serve immediately with extra parmesan and herbs.
