  • 1 tsp olive oil
  • 1½ tbsp butter
  • 2 cloves garlic, finely chopped
  • Pinch chilli flakes (optional)
  • Zest and juice of ½ lemon
  • 1 tbsp chopped parsley or fresh herbs
  • Optional: crusty bread, rice, or pasta to serve

Method

  1. Pat prawns dry and season lightly with salt and pepper.
  2. Heat olive oil in a pan over medium-high heat.
  3. Add prawns in a single layer and cook 1–2 minutes per side until just pink and cooked through. Remove briefly from pan.
  4. Reduce heat slightly and add butter, garlic, and chilli flakes. Cook gently for 30–40 seconds until fragrant.
  5. Return prawns to pan, tossing in the garlic butter.
  6. Add lemon zest and juice, cooking another 30 seconds to coat everything.
  7. Remove from heat and sprinkle with fresh herbs.
