Lamb Rogan Josh for One (Easy Single-Serve Comfort Curry)

There’s something deeply comforting about a pot of lamb rogan josh bubbling away on the stove. The colour. The aroma. The promise that dinner is going to feel like a proper event.

But traditionally? It’s a “serves 6–8” situation.

Here at Plan4One, we don’t need a catering-sized curry. We need:

  • Big flavour
  • Sensible portions
  • Smart ingredient use
  • And leftovers only when they’re intentional

Inspired by the classic Rogan josh, this single-serve version keeps all the warming spice and richness — just scaled perfectly for one generous bowl.

It’s slightly longer than our 20-minute recipes, so consider this your weekend comfort curry.

And trust me — it’s worth it.

Why This Rogan Josh Is a Smart Solo Choice

🥩 Iron-Rich Lamb

Using 150–180g diced lamb gives you:

  • High-quality protein
  • Iron (important for energy levels)
  • Zinc
  • B12

Perfect if you’ve been feeling run-down or heading into winter immune season.

🌶️ Anti-Inflammatory Spices

This recipe includes:

  • Turmeric
  • Ginger
  • Cumin
  • Paprika

All bringing warmth, flavour and anti-inflammatory properties.

🍅 Tomato-Based Sauce

The rich red colour comes largely from tomatoes, which provide:

  • Lycopene
  • Vitamin C
  • Natural acidity to balance the richness

Ingredients (Serves 1 Generously)

Protein

  • 150–180g diced lamb (shoulder or leg)

Spices

  • ½ tsp ground cumin
  • ½ tsp paprika
  • ½ tsp garam masala
  • ¼ tsp turmeric
  • ¼ tsp ground coriander
  • Pinch chilli flakes (optional)
  • Salt & pepper

Sauce Base

  • ½ small brown onion, finely diced
  • 1 garlic clove, minced
  • 1 tsp grated fresh ginger (or ¼ tsp ground)
  • ½ cup tomato passata
  • ¼ cup crushed tomatoes (use leftovers within 2–3 days or freeze)
  • 2 tbsp natural Greek yoghurt
  • 1 tsp olive oil

Optional Add-Ins

  • 1 tbsp almond meal (traditional rogan josh sometimes uses ground nuts for body)
  • Small handful baby spinach
  • Fresh coriander

To Serve

  • ½–¾ cup cooked basmati or brown rice
    or
  • 1 small naan (freeze remaining pieces immediately)

Estimated Cost Per Serve (Melbourne Pricing)

Approximately $7–$9 per serve, depending on lamb pricing.

Still significantly less than restaurant curry — and far more satisfying when you made it yourself.

Step-by-Step: Lamb Rogan Josh for One

Step 1 – Season the Lamb

In a bowl, toss lamb pieces with:

  • Cumin
  • Paprika
  • Garam masala
  • Turmeric
  • Ground coriander
  • Salt & pepper

Let sit while you prepare the onion.

Step 2 – Build the Flavour Base

Heat olive oil in a small saucepan over medium heat.

Add diced onion and cook for 4–5 minutes until softened and lightly golden.

Add:

  • Garlic
  • Ginger

Cook for another 30 seconds until fragrant.

Step 3 – Brown the Lamb

Increase heat slightly.

Add lamb to the pan and brown for 3–4 minutes, stirring occasionally.

You’re not cooking it through yet — just sealing in flavour.

Step 4 – Simmer Low & Slow

Add:

  • Tomato passata
  • Crushed tomatoes

Reduce heat to low.

Simmer gently for 30–40 minutes, stirring occasionally, until:

  • Lamb is tender
  • Sauce has thickened
  • Oil slightly separates at the edges (that’s flavour, not a mistake)

If the sauce thickens too much, add 1–2 tbsp water.

Optional: Stir in almond meal halfway through for extra body.

Step 5 – Finish with Yoghurt

Remove from heat.

Allow to cool slightly for 1–2 minutes.

Stir in Greek yoghurt until creamy.

Taste and adjust seasoning.

If adding spinach, stir through now and allow it to wilt.

What It Should Look Like

  • Deep reddish-orange sauce
  • Tender lamb pieces
  • Thick, glossy texture
  • Fragrant and warming

It should look like it came from your favourite Indian restaurant — minus the metal takeaway container.

Nutritional Snapshot (Approximate)

  • Calories: 600–750 (depending on rice/naan portion)
  • Protein: 35–40g
  • Carbohydrates: 45–60g
  • Iron-rich
  • Moderate healthy fats

A hearty, balanced comfort meal — especially good during colder months.

Storage & Reheat Tips

Fridge:

Keeps for 2–3 days in an airtight container.

Freezer:

Freezes beautifully for up to 2 months.

If cooking for future-you, double the recipe and freeze one portion immediately.

Reheat:

  • Microwave 3–4 minutes, stirring halfway
  • Add 1–2 tbsp water if needed
  • Stir through a small spoon of yoghurt after reheating for fresh creaminess

Smart Solo Ingredient Strategy

  • Crushed tomatoes: Freeze leftovers in small containers or silicone ice trays.
  • Yoghurt: Use in breakfast bowls or as a raita base tomorrow.
  • Spinach: Add to wraps, omelettes or pasta.
  • Rice: Cook once, portion for 2–3 days.

Every ingredient earns its place in your fridge.

Easy Variations

🔥 Extra Heat

Add:

  • ½ tsp chilli powder
    or
  • Fresh chopped chilli

  • Pumpkin cubes
  • Zucchini

🥥 Slightly Creamier Version

Replace 1 tbsp yoghurt with 1 tbsp light coconut milk.

Turn It Into a Weekend Ritual

Enjoy the smell filling your kitchen.

Cooking for one doesn’t mean rushing through meals standing at the bench.

This is a sit-down-with-a-bowl moment.
