If you’re cooking for one, lamb can feel like a bit of a luxury. A full roast leg is definitely a “feed the extended family” situation… but the good news is there are plenty of smaller cuts of lamb that are perfect for solo cooking.
This recipe uses lamb rump, which is one of my favourite cuts for quick weeknight meals. It’s tender, flavourful, and cooks beautifully in a pan. Pair it with some simple roasted vegetables and you’ve got a restaurant-style lamb dinner for one without the restaurant price tag.
Better still, the whole meal comes together in about 25 minutes, making it perfect for a weeknight when you want something hearty and nutritious without spending the evening in the kitchen.
This recipe kicks off the #SoloLambSeries, a collection of easy, healthy lamb recipes designed specifically for people cooking for one.
Why Lamb Is Great for Solo Cooking
Lamb is often overlooked when cooking for one, but it actually has several advantages:
Small cuts cook quickly
Lamb rump or lamb leg steaks cook in minutes.
Big flavour
Lamb naturally has rich flavour, so you don’t need many ingredients.
Nutrient-dense
Lamb is packed with nutrients that are especially helpful in cooler months.
Key nutrients in lamb include:
• Iron – helps prevent fatigue
• Zinc – supports immune function
• Vitamin B12 – important for energy production
• High-quality protein – helps keep you full longer
Paired with roasted vegetables, you get a balanced, satisfying meal with minimal effort.
Garlic & Rosemary Lamb Rump with Roasted Veg (Serves 1)
Ingredients
For the roasted vegetables
• 1 small potato, diced
• 1 small carrot, sliced
• ½ zucchini, sliced
• 1 tablespoon olive oil
• Salt and pepper
For the lamb
• 1 small lamb rump (about 150–200g)
• 1 garlic clove, crushed
• 1 teaspoon fresh rosemary (or ½ tsp dried)
• 1 teaspoon olive oil
• Salt and pepper
Optional garnish
• Lemon wedge
• Fresh parsley
Step-by-Step Instructions
1. Roast the vegetables
Preheat your oven to 200°C (fan 180°C).
Place the diced potato, carrot, and zucchini on a small baking tray.
Drizzle with olive oil and season with salt and pepper.
Roast for 18–20 minutes, turning halfway through, until the vegetables are golden and tender.
2. Season the lamb
Pat the lamb rump dry with paper towel.
Rub with:
• olive oil
• crushed garlic
• rosemary
• salt and pepper
Let it sit at room temperature for 5 minutes while the vegetables finish roasting.
3. Cook the lamb
Heat a frying pan over medium-high heat.
Add the lamb rump and cook:
• 3–4 minutes on the first side
• 3–4 minutes on the other side
This will give you a juicy medium finish.
If you prefer it more well done, cook for an extra minute per side.
4. Rest the lamb
Transfer the lamb to a plate and let it rest for 5 minutes.
Resting helps keep the meat tender and juicy.
5. Assemble the meal
Slice the lamb and serve with the roasted vegetables.
Finish with:
• a squeeze of lemon
• fresh parsley (optional)
Simple, nourishing, and incredibly satisfying.

Budget Tips for Solo Cooks
Lamb can sometimes seem expensive, but there are ways to keep it affordable.
Look for small lamb rumps or leg steaks
They’re often sold in single portions.
Check the reduced section
Lamb is frequently discounted close to its sell-by date and freezes well.
Buy a larger pack and portion it
Divide and freeze individual servings.
Easy Ingredient Swaps
This recipe is flexible depending on what you have in the fridge.
Swap the vegetables
Try:
• pumpkin
• sweet potato
• green beans
• capsicum
Swap the herbs
Instead of rosemary, try:
• thyme
• oregano
• Italian herb mix
Add a quick sauce
A drizzle of:
• yoghurt and lemon
• mint sauce
• garlic butter
can change the flavour profile completely.
Storage & Reheating Tips
If you happen to have leftovers (rare with lamb this good):
Fridge:
Store in an airtight container for up to 2 days.
Reheating:
