- 1 small sweet potato, chopped into cubes
- 1 cup broccoli florets
- ½ red capsicum, sliced

- Juice and zest of ½ lemon
- 1 garlic clove, crushed
- 1 teaspoon dried oregano
- ½ teaspoon paprika
- Salt and pepper to taste

- 1 tablespoon Greek yoghurt for serving

How To Make It
- Preheat oven to 200°C fan-forced.
- Add sweet potato, capsicum and onion to a lined baking tray. Toss with half the olive oil, paprika, salt and pepper.
- Roast vegetables for 20 minutes until they begin to soften and caramelise.
- Meanwhile, coat the chicken thigh with remaining olive oil, garlic, lemon zest, lemon juice and oregano. Add the chicken and broccoli to the tray.
- Bake for a further 20–25 minutes until:
- the chicken is cooked through
- juices run clear
- the thickest part reaches 75°C
- vegetables are tender
- Rest the chicken for 3–5 minutes before serving.
- Serve with a spoonful of Greek yoghurt and fresh herbs if desired.
