- ½ cup cooked quinoa (cook a batch ahead or use a microwave pouch)

- 1 garlic clove, minced
- A handful of baby spinach
- 1 tsp olive oil
- Salt & cracked pepper to taste
🍽️ Instructions
- Sizzle the mushrooms
- Heat the olive oil in a small pan over medium heat.
- Add the garlic and mushrooms, and cook for about 5–7 minutes, until golden and fragrant.
- Add the greens
- Toss in the baby spinach and stir gently until wilted. About 1–2 minutes max.
- Stir in the quinoa
- Add the cooked quinoa to the pan.
- Stir everything together, season with salt and pepper, and heat through.
- Eat it straight out of the pan if you like. Zero judgement.
