There’s something wildly satisfying about eating with your hands. It feels rebellious… but also kind of chic.
These Turkey Mince Lettuce Cups are your go-to for a light but flavour-packed dinner when you’re solo, short on time, and want something a little fun. Think street food meets meal prep – minus the street and the prep.
🛒 Ingredients
- 100g turkey mince
- 1 tsp hoisin sauce
- ½ carrot, grated
- 2 butter lettuce leaves
👩🍳 Method
- Heat a non-stick pan over medium heat.
- Add turkey mince and sauté until browned and cooked through.
- Stir in hoisin sauce and grated carrot. Cook for another 1–2 minutes until everything’s nicely coated and fragrant.
- Spoon the mixture into lettuce cups.
- Eat immediately, ideally over the sink if you’re not keen on plates (we don’t judge).
💡 Plan4One Tips
- Level it up: Add chopped peanuts, spring onions or a squeeze of lime if you’ve got them.
- Want it spicier? Add a dash of sriracha or chilli flakes.
- Lettuce hack: Butter lettuce is soft and perfect for cupping. But cos, iceberg, or even cabbage leaves work in a pinch.
🍴Why You’ll Love It
- Turkey mince is lean, high in zinc and protein, and cooks in a flash.
- Carrots add a bit of crunch, sweetness, and a nice vitamin C boost.
- The lettuce leaves keep things light, crisp, and super hydrating — perfect for when heavy winter food feels like too much.
Also? It looks fancier than it is. Which is the Plan4One motto, really.
🔁 Leftover-Friendly?
You can double the filling and save half in the fridge. Just assemble fresh when you’re ready to eat — soggy lettuce is a crime.
