Ingredients (Serves 1)

  • 1 large potato
  • 2–3 tbsp Greek yoghurt or sour cream
  • Small handful chives or spring onion
  • Optional topping: leftover ham, mushrooms, or cheese
  • Olive oil, salt

How to make it

  1. Prick potato, rub lightly with oil and salt.
  2. Bake at 200°C for 45–55 minutes until soft.
    • Bake until a knife slides easily into the centre with no resistance.
  3. Split open, fluff with a fork, add toppings.

Swaps & tips

  • No oven? Microwave then crisp briefly in a pan
    • If microwaving, cook until completely soft all the way through before finishing in a pan or oven.
  • Vegetarian? Mushrooms + yoghurt work beautifully
  • Add leftover veg if you have it — no rules
