Ingredients (Serves 1)
- ½ cup cooked lentils (rinsed and drained if using canned)
- 1 tsp olive oil
- 1 garlic clove
- 1–2 cups baby spinach
- Lemon juice, salt, pepper
How to make it
- Warm olive oil in a pan. Add garlic.
- Add lentils and heat through. Heat lentils through until hot, not just warm.
- Stir in spinach until wilted.
- Finish with lemon, salt and pepper.
