When You Want Something Lighter Than Chocolate-Chocolate

These soft lemon & white chocolate cookies are bright without being sharp, sweet without being heavy, and perfect for afternoon tea moments where you want something, not everything.

Ingredients (Easy Australian Staples)
- 2 tbsp unsalted butter
- 2 tbsp white sugar
- Zest of ½ lemon
- 1 egg yolk
- ¼ tsp vanilla
- ¼ cup plain flour
- Pinch baking powder
- Pinch salt
- 2 tbsp white chocolate chips
Method
- Preheat oven to 180°C. Line tray.
- Cream butter, sugar and lemon zest.
- Add egg yolk and vanilla.
- Fold in flour, baking powder and salt.
- Stir through white chocolate.
- Spoon into 4 cookies, flatten lightly.
- Bake 9–11 minutes.
- Cool fully before eating.
