Valentine’s Day dinners have a reputation for being… a lot. Overpriced menus, awkward reservations, and food that looks better on Instagram than it tastes.
But cooking something special at home? That’s where the real romance lives — especially when it’s low-fuss, comforting, and actually enjoyable to make.
This Creamy Tuscan Chicken for One (or Two) is part of the Plan4One Valentine’s Week series, created for anyone who wants a romantic dinner without spending the day stressed in the kitchen. Whether you’re cooking for a partner, a date, or just treating yourself (which absolutely counts), this recipe keeps things simple, flavour-packed, and quietly impressive.
No white tablecloths. No complicated techniques. Just good food, good company — even if that company is you — and a reminder that love doesn’t need a booking confirmation.

💕 Why This Recipe Works for Date Night
- It looks impressive but is genuinely easy to cook

Basically, it says “I made an effort” — without actually ruining your evening.
🥘 Creamy Tuscan Chicken for One (or Two)
Serves
1 generous serve (or light dinner for two)
Prep Time
10 minutes
Cook Time
20 minutes
Ingredients
- 1 chicken thigh or breast fillet (about 180–220g)
- Salt and cracked black pepper
- 1 tsp olive oil
- 1 clove garlic, finely chopped
- ½ cup cherry tomatoes, halved
- ½ cup baby spinach leaves
- ¼ cup thickened cream (or light cream)
- 1 tbsp grated parmesan
- Optional: dried Italian herbs or oregano
- Optional: chilli flakes (for a little heat)
Method
- Season the chicken generously with salt and pepper.
- Heat olive oil in a pan over medium heat. Add the chicken and cook for 4–5 minutes per side until golden and cooked through. Remove from the pan and set aside.
- In the same pan, add garlic and cook for 30 seconds until fragrant.
- Add cherry tomatoes and cook for 2–3 minutes until softened and slightly jammy.
- Stir in cream, parmesan, and herbs. Simmer gently for 2–3 minutes until the sauce thickens slightly.
- Add spinach and stir until just wilted.
- Return chicken to the pan, spoon sauce over the top, and warm through for 1–2 minutes.
- Finish with cracked pepper and optional chilli flakes.
🍞 What to Serve It With
- Crusty bread (non-negotiable for sauce mopping)
- Creamy mash or soft polenta
- Steamed green beans or broccolini
If wine is involved, a light red or creamy white works beautifully.
🧊 Storage & Leftovers
- Keeps in the fridge for up to 2 days
- Reheat gently on the stove or microwave
- Add a splash of water or cream when reheating to loosen the sauce
🔁 Easy Swaps
- Chicken → Mushrooms: for a vegetarian version
- Cream → Evaporated milk: lighter option
- Spinach → Kale or silverbeet: if that’s what’s in the fridge
🕯️ Set the Mood (Optional but Recommended)
- Dim lighting
- One decent plate instead of eating from the pan
- Music you actually like (not a Valentine’s playlist curated by someone else)
