Today’s recipe is less of a meal and more of a lifestyle choice. The Microwave Loaded Jacket Potato is what I turn to when I’m so tired I can’t remember if I already washed my hair or just thought about it very hard. It’s fast, filling, warm, and—most importantly—requires exactly zero pans.

Ingredients (Serves 1 tired legend)

  • 1 large potato (anything floury like Sebago or brushed works best)
  • 2 tbsp grated cheese (cheddar, tasty, mozzarella… your potato, your rules)
  • 1 tbsp Greek yoghurt or sour cream
  • 1 spring onion, finely chopped
  • Optional: 1 rasher of bacon, chopped and cooked until crispy

👉 No spring onions? A sprinkle of dried chives or just a little extra cheese will do in a pinch.


Instructions

  1. Prep the spud:
    Give the potato a quick rinse and a good stab—er, prick—with a fork a few times. This helps steam escape and avoids microwave explosions. Nobody wants potato shrapnel at 7pm.
  2. Microwave it like you mean it:
    Place on a microwave-safe plate and zap it on high for 6–8 minutes, turning it over halfway. It’s done when it’s soft all the way through. Bigger potatoes may need another minute or two. Trust the poke test.
  3. Fluff & stuff:
    Slice it open (careful, it’s hot!) and use a fork to fluff up the insides. Add a little butter if you’re feeling fancy.
  4. Top it off:
    Sprinkle on the cheese, dollop on the yoghurt or sour cream, toss over the spring onion, and crown it all with crispy bacon bits if you’re using them.
  5. Scoop and sigh:
    Curl up with your masterpiece and eat it straight off the plate. No one’s judging. We’re all just trying our best out here.

Lazy Cook’s Add-Ins & Swaps

  • Make it vego: Skip the bacon and add a spoonful of canned beans, leftover roast veg, or sautéed mushrooms.
  • Go fancy: Add a drizzle of truffle oil, some feta, or a sprinkle of smoked paprika. Look at you, gourmet!
  • Dairy-free? Use a plant-based cheese and dairy-free yoghurt or hummus.
  • Extra protein: Toss in shredded chicken, a boiled egg, or a spoonful of cottage cheese.
