Ingredients (1 Large Muffin)
Muffin
½ cup plain flour
1 tbsp brown sugar
¼ tsp cinnamon
Pinch of nutmeg
¼ tsp baking powder
Pinch of salt
¼ cup finely grated carrot
1 tbsp neutral oil or melted butter
2 tbsp milk
½ tsp vanilla extract
1 tbsp chopped walnuts (optional)
1 tbsp raisins or sultanas (optional)
Cream Cheese Glaze
2 tbsp cream cheese, softened
1 tsp icing sugar
½ tsp lemon juice or milk
Equipment
- Muffin tin OR ramekin
- Mixing bowl
- Spoon or small whisk
Instructions
Step 1 – Prepare the Oven
Preheat your oven to 180°C (350°F).
Lightly grease a muffin tin or small ramekin.
Step 2 – Mix the Dry Ingredients
In a bowl combine:
- flour
- brown sugar
- cinnamon
- nutmeg
- baking powder
- salt
Stir until evenly combined.
Step 3 – Add the Wet Ingredients
Add:
- grated carrot
- oil or melted butter
- milk
- vanilla extract
Mix gently until a soft batter forms.
Fold in the walnuts and raisins if using.
Step 4 – Fill the Muffin Tin
Spoon the batter into the prepared muffin tin or ramekin.
It should be about ¾ full.
Step 5 – Bake
Bake for 18–22 minutes, or until a toothpick inserted into the centre comes out clean.
Let the muffin cool for about 10 minutes before glazing.
Step 6 – Make the Cream Cheese Glaze
In a small bowl mix:
- cream cheese
- icing sugar
- lemon juice or milk
Stir until smooth.
Spoon or drizzle over the muffin.
