Small-Batch Easter Spiced Scones (Makes 2)

Small-Batch Easter Spiced Scones

A Simple Easter Morning Bake

There’s something wonderfully comforting about a fresh scone.

Warm from the oven, lightly golden on top, and just waiting to be split open and spread with butter — it’s the kind of simple bake that feels perfect for a quiet Easter morning.

These Small-Batch Easter Spiced Scones take inspiration from the warm flavours of traditional hot cross buns, combining gentle spices and sweet dried fruit into a soft, tender scone.

Instead of making a large batch, this recipe produces just two scones, making it ideal for solo bakers or small households.

They come together quickly, bake in under 15 minutes, and pair beautifully with a cup of coffee or tea while the rest of the day slowly begins.

Sometimes the simplest Easter treats are the most satisfying.

Part of the Easter Baking for One Series

If you’ve ever wanted to enjoy Easter baking without ending up with a week’s worth of leftovers, this series is for you.

In Easter Baking for One, we’re taking classic Easter treats and scaling them down into small-batch, solo-friendly recipes that are perfect for one person or a small household.

Expect:

  • Warm spices
  • Small baking dishes
  • Simple ingredients
  • Fresh homemade treats without waste

Why This Recipe Works for Solo Bakers

Traditional scone recipes often produce 8–12 scones, which can be far more than one person needs.

This small-batch version keeps things manageable.

It’s:

✔ Ready in under 20 minutes
✔ Makes just two scones
✔ Uses simple pantry ingredients
✔ Perfect for breakfast or afternoon tea

They’re also wonderfully adaptable depending on what dried fruit or spices you have available.

Ingredients (Makes 2 Scones)

½ cup plain flour
1 tbsp sugar
¼ tsp baking powder
¼ tsp cinnamon
Pinch of mixed spice
Pinch of salt
1 tbsp cold butter, cubed
2 tbsp milk
1 tbsp sultanas or raisins

Optional glaze:

1 tsp honey
½ tsp warm water

Equipment

  • Small mixing bowl
  • Baking tray
  • Baking paper
  • Fork or pastry cutter

Instructions

Step 1 – Preheat the Oven

Preheat your oven to 200°C (390°F).

Line a small baking tray with baking paper.

Step 2 – Mix the Dry Ingredients

In a small bowl combine:

  • flour
  • sugar
  • baking powder
  • cinnamon
  • mixed spice
  • salt

Stir until evenly combined.

Step 3 – Rub in the Butter

Add the cubed butter.

Use your fingers or a fork to rub the butter into the flour until the mixture resembles coarse crumbs.

Step 4 – Add the Liquid

Stir in:

  • milk
  • sultanas

Mix gently until a soft dough forms.

Avoid overmixing, which can make the scones tough.

Step 5 – Shape the Scones

Turn the dough onto a lightly floured surface.

Shape into a small round about 2–3 cm thick.

Cut into two wedges and place on the prepared baking tray.

Step 6 – Bake

Bake for 12–14 minutes, until the scones are lightly golden on top.

Allow them to cool for a few minutes before serving.

Step 7 – Optional Honey Glaze

Mix honey with warm water and brush lightly over the warm scones for a subtle shine and sweetness.

Nutritional Highlights

These small scones provide a balanced treat without excessive portions.

Sultanas contribute:

  • natural sweetness
  • small amounts of fibre

Using a modest amount of butter also keeps the scones tender without making them overly rich.

Scones are best enjoyed fresh, but they can be stored if needed.

Room temperature

Keep covered for up to 2 days.

Freezer

Freeze for up to 1 month.

Reheat before serving.

Reheating Tip

Warm the scones in the microwave for 10–12 seconds or in a low oven for a few minutes.
