Lamb, Mint & Feta Warm Salad

A Fresh, Healthy Single-Serve Lamb Salad Packed with Mediterranean Flavour

When people think of lamb, they often imagine slow roasts, hearty stews, or rich comfort food. But lamb can also work beautifully in lighter, fresh meals—especially when paired with bright herbs and roasted vegetables.

This Lamb, Mint & Feta Warm Salad is a perfect example. Tender slices of lamb are served over warm roasted pumpkin and peppery rocket, finished with salty feta and fresh mint.

It’s the kind of meal that feels both light and satisfying at the same time—plenty of protein, lots of flavour, and colourful vegetables that make the plate feel vibrant and nourishing.

Like the other recipes in this collection, it’s designed specifically for solo cooks. This dish comes together in about 20 minutes, making it ideal for a quick weeknight dinner that still feels a little special.

This recipe is part of the #SoloLambSeries, a collection of easy lamb recipes designed for people cooking for one.

Why Lamb Works So Well in Salads

Warm salads are a fantastic option when you want something nutritious but still filling.

Adding lamb brings several benefits:

High-quality protein
Helps keep you full longer.

Iron and B vitamins
Support energy levels.

Rich flavour
A little lamb goes a long way, meaning you don’t need heavy sauces or dressings.

When combined with ingredients like pumpkin, rocket, mint, and feta, lamb creates a dish that’s balanced, colourful, and incredibly satisfying.

Lamb, Mint & Feta Warm Salad (Serves 1)

Ingredients

• 150g lamb leg steak or lamb rump
• 1 cup pumpkin, cut into small cubes
• 1 cup rocket (arugula)
• 2 tablespoons crumbled feta
• 1 tablespoon olive oil
• Salt and pepper

For the dressing

• 1 teaspoon olive oil
• 1 teaspoon lemon juice
• 1 teaspoon honey
• Pinch of salt and pepper

Optional garnish

• fresh mint leaves
• toasted pine nuts

Step-by-Step Instructions

1. Roast the pumpkin

Preheat your oven to 200°C (fan 180°C).

Place the pumpkin cubes on a small baking tray, drizzle with olive oil, and season with salt and pepper.

Roast for 15–18 minutes, until tender and lightly caramelised.

2. Prepare the lamb

Pat the lamb dry and season both sides with salt and pepper.

Heat a frying pan over medium-high heat.

Add a small drizzle of olive oil and cook the lamb for:

• 3–4 minutes on the first side
• 3–4 minutes on the second side

This will give you a juicy medium finish.

Remove the lamb from the pan and let it rest for 5 minutes.

3. Make the dressing

In a small bowl, whisk together:

• olive oil
• lemon juice
• honey
• salt and pepper

This simple dressing adds brightness to the dish and balances the richness of the lamb.

4. Assemble the salad

Place the rocket in a bowl or on a plate.

Top with the warm roasted pumpkin.

Slice the rested lamb thinly and arrange it over the salad.

5. Finish and serve

Sprinkle over:

• crumbled feta
• fresh mint leaves
• toasted pine nuts (optional)

Drizzle the dressing over the salad just before serving.

You’ll end up with a beautiful balance of warm, fresh, savoury, and tangy flavours.

Budget Tips for Solo Cooks

Salads like this are a great way to make a small amount of lamb go further.

Buy lamb steaks instead of pre-cut strips
They’re often cheaper and easy to slice.

Use frozen pumpkin cubes if available
They roast beautifully and reduce prep time.

Stretch the salad with extra greens
Spinach or mixed salad leaves work perfectly.

Easy Ingredient Swaps

This salad adapts easily depending on what’s in your fridge.

Swap the vegetables

Instead of pumpkin, try:

• roasted sweet potato
• roasted beetroot
• grilled zucchini

Change the greens

Rocket can be swapped for:

• baby spinach
• kale
• mixed lettuce

Swap the cheese

Instead of feta, try:

• goat cheese
• shaved parmesan

Storage Tips

This salad is best eaten fresh, but you can prepare parts ahead of time.
