Mini Hot Cross Bun Loaf (Single-Serve Easter Bake)

A Classic Easter Favourite — Just the Right Size

When Easter rolls around, hot cross buns appear everywhere — bakeries, supermarkets, cafés, and probably even the neighbour’s kitchen if the smell of cinnamon drifting over the fence is anything to go by.

They’re a classic for a reason.

Soft, gently spiced, studded with fruit, and perfect toasted with butter.

But the traditional recipe usually makes a full tray of buns, which is great if you’re feeding a family — not so great if you live alone.

That’s where this recipe comes in.

This Mini Hot Cross Bun Loaf captures all the warm Easter flavours you love, but bakes them into a small loaf perfect for one or two servings.

Slice it, toast it, butter it generously, and enjoy the comforting smell of Easter baking without committing to a dozen buns.

Part of the Easter Baking for One Series

If you’ve ever wanted to enjoy Easter baking without ending up with a week’s worth of leftovers, this series is for you.

In Easter Baking for One, we’re taking classic Easter treats and scaling them down into small-batch, solo-friendly recipes that are perfect for one person or a small household.

Expect:

  • Warm spices
  • Small baking dishes
  • Simple ingredients
  • Fresh homemade treats without waste

Why This Recipe Works for Solo Bakers

Traditional hot cross buns require:

  • kneading dough
  • shaping multiple buns
  • waiting for multiple rises

This mini loaf simplifies the process while keeping the flavour.

It’s:

✔ Easier to shape
✔ Perfect for small kitchens
✔ Ideal for ramekins or mini loaf tins
✔ Great toasted the next morning

Ingredients (1 Small Loaf)

Dough

1 cup plain flour
1 tbsp sugar
½ tsp instant yeast
½ tsp cinnamon
¼ tsp mixed spice
Pinch of salt
¼ cup warm milk
1 tbsp melted butter
2 tbsp sultanas or raisins
½ tsp orange zest (optional)

Cross

2 tbsp plain flour
1–2 tbsp water

Glaze

1 tsp honey or apricot jam
1 tsp hot water

Equipment

  • Small loaf tin OR large ramekin
  • Mixing bowl
  • Spoon
  • Small piping bag or zip bag

Instructions

Step 1 – Mix the Dough

In a small bowl combine:

  • flour
  • sugar
  • yeast
  • cinnamon
  • mixed spice
  • salt

Add the warm milk and melted butter.

Mix until a soft dough forms.

Fold in the sultanas and orange zest.

Step 2 – Knead Briefly

Turn the dough onto a lightly floured surface.

Knead gently for 3–4 minutes until smooth.

The dough should feel soft and slightly springy.

Step 3 – First Rise

Place the dough in a lightly oiled bowl.

Cover with a tea towel.

Let it rise in a warm place for 45–60 minutes, or until roughly doubled.

Step 4 – Shape the Mini Loaf

Lightly grease your small loaf tin or ramekin.

Shape the dough into a small oval and place it inside.

Cover and let it rise again for 20–30 minutes.

Step 5 – Make the Cross

Mix flour and water into a thick paste.

Spoon into a piping bag or zip bag and snip the corner.

Pipe a cross over the top of the dough.

Step 6 – Bake

Bake at 180°C (350°F) for 18–22 minutes, until golden and cooked through.

Your kitchen should now smell like a bakery on Easter morning.

Step 7 – Glaze

Mix honey or jam with hot water.

Brush over the warm loaf for that classic shiny hot cross bun finish.

Nutritional Highlights

While this is definitely a treat, it also offers a few nutritional benefits.

Sultanas provide:

  • natural sweetness
  • iron
  • antioxidants

Spices like cinnamon may help:

  • regulate blood sugar
  • add flavour without extra sugar

Storage Tips

If you somehow don’t eat it immediately (impressive restraint), you can:

Room temperature

Store covered for 24 hours.

Freezer

Slice and freeze for up to 1 month.

Toast directly from frozen.

Reheating Tip

This loaf is fantastic toasted.

Slice thickly and toast until lightly crisp, then add:

  • butter
  • honey
  • a little cream cheese

Perfect with a morning coffee.

Easy Ingredient Swaps
