Tender, lightly spiced chicken combined with sweet mango, creamy avocado and crunchy vegetables, served in crisp lettuce leaves with a refreshing lime yoghurt dressing.

Ingredients:

  • 130g raw skinless chicken breast
  • ½ small ripe mango
  • ¼ medium avocado
  • ¼ red capsicum
  • 4–5 large cos lettuce leaves
  • ¼ Lebanese cucumber
  • 1 tablespoon plain Greek yoghurt
  • 1 teaspoon olive oil
  • 1 tablespoon fresh lime juice

  • Pinch of chilli flakes
  • Fresh coriander and black pepper to taste

Instructions:

  1. Slice the chicken into thin strips and season with smoked paprika, chilli flakes and black pepper.

  3. Dice the mango, avocado, cucumber and red capsicum into small pieces.
  4. Mix the Greek yoghurt with half the lime juice to create a quick dressing.
  5. Arrange the lettuce leaves on a serving plate. Divide the cooked chicken and diced fruit and vegetables between them.
  6. Drizzle with the yoghurt dressing and remaining lime juice. Finish with fresh coriander and serve immediately.

Enjoy while fresh and crunchy!

Why You’ll Love This Recipe

There is something particularly appealing about a meal that feels light and refreshing but still delivers plenty of nutritional value.

These lettuce cups bring together a lovely combination of sweet, savoury, creamy and spicy flavours.

Here’s why I think they’ll become a summer favourite:

  • Protein-packed: Chicken breast provides lean protein to help maintain muscle and keep you feeling satisfied.
  • Fresh summer flavours: Sweet mango, creamy avocado and zesty lime create a delicious combination.
  • A lighter alternative: Crisp lettuce leaves replace traditional wraps, reducing the need for heavier bread-based ingredients.
  • Good fats: Avocado provides heart-friendly unsaturated fats.
  • Quick and easy: Everything comes together in approximately 20 minutes.
  • Perfectly portioned: Designed for one, so there is no need to prepare a mountain of food just to make lunch.

And perhaps best of all, you won’t spend the afternoon feeling like you’ve swallowed a brick. That’s a summer cooking win in my book!

Nutritional Benefits

1. Protein for muscle maintenance

Chicken breast is the nutritional workhorse of this recipe.

Protein helps repair and maintain muscle tissue, particularly important for people who exercise regularly or want to maintain muscle while managing their weight.

2. Mango for vitamin C and summer freshness

Mango is more than just a delicious summer fruit.

It provides vitamin C, which supports normal immune function and helps the body absorb iron from plant-based foods.

It also contributes natural sweetness, meaning there is no need for sugary sauces or dressings.

3. Avocado for healthy fats

Avocado provides predominantly monounsaturated fats, which can form part of a heart-healthy eating pattern.

It also contributes fibre and helps make the meal more satisfying.

4. Fresh vegetables for hydration

Cucumber, capsicum and lettuce all contain a high proportion of water.

While they don’t replace drinking water, they make a useful contribution to overall fluid intake during warmer weather.

5. Chilli for a little flavour excitement

Chilli adds warmth and character without requiring heavy sauces.

It also means you can adjust the flavour to suit your preference without changing the overall recipe.

Handy Hints

Choose a ripe mango. A mango that gives slightly when gently pressed will be easier to dice and provide the best sweetness.

Don’t overcook the chicken. Thin strips cook quickly. Use a food thermometer to check the thickest piece reaches 75°C.

Keep the lettuce crisp. Wash and dry the leaves thoroughly before assembling. Wet lettuce is nobody’s idea of a good time.

Prepare the dressing separately. Add it just before serving to prevent the lettuce leaves from becoming soggy.

Control the chilli. Start with a small pinch. You can always add more, but you can’t easily remove it!

Make the most of your mango. Use the remaining mango in breakfast yoghurt, a smoothie or another summer salad.

Easy Swaps and Additions

  • No chicken breast? Use leftover cooked chicken, provided it has been stored safely.
  • Want a vegetarian version? Substitute the chicken with cooked edamame or seasoned chickpeas.
  • Prefer more heat? Add finely chopped fresh red chilli.
  • Not a coriander fan? Fresh mint or parsley makes a lovely alternative.
  • Want extra crunch? Add a teaspoon of toasted pumpkin seeds.
  • Need more energy after exercise? Serve alongside ½ cup of cooked brown rice or a small wholemeal pita.
  • Watching your dairy intake? Replace the Greek yoghurt dressing with extra lime juice and a little olive oil.

Storage and Food Safety

These lettuce cups are best assembled immediately before eating, but some preparation can be done ahead.

  • Cooked chicken should be refrigerated promptly in a covered container at or below 5°C.
  • Keep cooked chicken separate from raw chicken and raw chicken preparation equipment.
  • Use refrigerated leftovers within 2 days for best safety and quality.
  • Store washed lettuce leaves in a separate airtight container lined with paper towel.
  • Keep diced mango and cucumber refrigerated in covered containers.
  • Cut avocado just before serving to preserve its colour and texture.
  • Avoid leaving prepared chicken or assembled lettuce cups sitting out in the summer heat.

For the best experience, prepare the chicken and vegetables separately and assemble everything just before lunch.

Frequently Asked Questions

Can I prepare these lettuce cups the night before?

Yes. Cook the chicken, allow it to cool promptly and refrigerate it. Prepare the vegetables separately and assemble the lettuce cups shortly before eating.

Can I eat the chicken cold?

Absolutely. Once cooked, safely chilled chicken works beautifully in this recipe. It makes an especially refreshing summer lunch.

Are lettuce cups healthier than traditional wraps?

They can be a useful lower-energy alternative to bread-based wraps, particularly if you’re looking to increase your vegetable intake. However, both can fit into a balanced diet.

Can I make this recipe suitable for a post-workout meal?

Yes. The chicken supplies protein, while the mango provides carbohydrates. If you’ve completed a demanding workout, add brown rice or wholegrain pita to provide additional carbohydrates.

Can I use frozen mango?

Yes, provided it is thawed in the refrigerator and drained before use. Fresh mango will generally provide a firmer texture.

Is this recipe suitable for weight maintenance?

Yes. It combines lean protein, vegetables, fruit and healthy fats in a portion-controlled meal. Individual energy requirements vary, so add a carbohydrate side if you need a more substantial meal.

A Little Summer Freshness, Wrapped in Lettuce

These Mango, Avocado & Chilli Chicken Lettuce Cups tick all those boxes. They’re colourful, satisfying, packed with protein and wonderfully refreshing when the temperature starts climbing.
