A Bright, Sunny Cake for Easter Weekend
After a few rich chocolate treats and warmly spiced bakes, it’s nice to have something that feels light, fresh, and a little bit sunshiney.
That’s exactly where this Mini Lemon & Coconut Easter Cake comes in.
It’s soft, fluffy, and gently sweet, with bright lemon flavour and the delicate texture of coconut running through every bite.
Best of all, it’s baked in a single ramekin or small dish, which means you can enjoy a homemade Easter cake without committing to a full-sized bake that lingers in the kitchen all week.
It’s the kind of little cake that works beautifully:
- with morning coffee
- as a mid-afternoon treat
- or as a light Easter dessert
Simple ingredients, minimal fuss, and just enough cake to make the day feel special.
